Cranberry Pecan Goat Cheese Log

A soft log of goat cheese coated in colorful and crunchy pecans and dried cranberries. Great for spreading on crackers.

Ingredients
  

  • 8 oz goat cheese softened
  • 4 oz cream cheese softened
  • 0.5 cup dried cranberries chopped
  • 0.5 cup pecans toasted and chopped
  • 1 tbsp fresh rosemary minced

Method
 

  1. Beat the goat cheese and cream cheese together until smooth.
  2. Scoop the mixture onto plastic wrap and shape into a log, then chill 30 minutes to firm up.
  3. Combine the cranberries, pecans, and rosemary on a baking sheet.
  4. Unwrap the log and roll it through the cranberry-pecan mixture, pressing gently to coat all sides.
  5. Serve with crackers or sliced baguette.

Notes

Make it a day ahead and keep wrapped in the fridge until party time.
