- Saute the onion, carrots and celery in a large pot until softened.
- Add the chicken broth and shredded chicken and bring to a gentle simmer.
- Stir the Bisquick and milk together until a soft dough forms.
- Drop spoonfuls of dough onto the simmering broth, cover the pot and cook 10 to 15 minutes without lifting the lid.
- Test a dumpling with a toothpick before serving and season the broth to taste.
Notes
Cracker Barrel's original uses rolled flat dumplings; the Bisquick version gives fluffy, cakey dumplings instead. Do not lift the lid - the steam is what cooks the tops, and peeking drops the temperature and gives you dense, doughy centers. Ten minutes is the minimum; thick dropped dumplings may need 12 to 15. Low-sodium broth lets you control the salt, and thin broth means thin flavor.
