Ingredients
  

  • ¾ cup coconut flour
  • ½ cup softened butter
  • ½ cup erythritol or monk fruit sweetener
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon optional

Method
 

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sweetener until light and fluffy, about 2-3 minutes.
  3. Add eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the coconut flour, baking powder, salt, and cinnamon if using.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  6. Roll dough into 1-inch balls and place on prepared baking sheets, spacing them 2 inches apart. Gently flatten each ball with the bottom of a glass or your palm.
  7. Bake for 10-12 minutes until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
