Method
- Start by patting the chicken wings dry then scoring the skin with diagonal lines. Add into a bowl and season lightly with salt (¼ tsp) and white pepper (¼ tsp).
- In a small bowl, mix light soy sauce, dark soy sauce, Shaoxing cooking wine, ¾ tsp salt, 1 tsp sugar and ¾ tsp pepper.
- Open the Coca-Cola and pour into a tall glass, this helps to get rid of bubbles before the cooking begins.
- In a large wok or saucepan, add oil and let the pan heat up to medium high. Stir in the prepped ginger and garlic, cook for about a minute. Place the chicken wings in the pan, skin side down.
- Let the chicken wings cook for about 3-4 minutes, then flip onto the other side. There should be a light golden colour which has formed. Cook for another 3 minutes, then add in the mixed seasoning sauce.
- Stir the sauce well with the chicken wings and let cook for about 3 minutes. Now, pour in the Coca-Cola and put a lid on the pan. Continue cooking for another 20 minutes, stirring every 5-10 times to avoid sticking at the bottom of the pan. Remove the lid after and continue cooking for 10 more minutes.
- Chicken should be done when the thickest part reaches around 75°C / 167°F. At this point, the Coca-Cola should have been reduced into a thick sauce.
- Add in the sesame seeds and stir to mix well. Place the chicken wings into a plate and sprinkle the spring onion slices on top.
Notes
It's super important to use the coca-cola original and not the zero version since, the zero version doesn't use traditional sugar so it will not work. The Shaoxing wine will help give the chicken a smoky flavour but also add depth to the sauce, a great alternative I've found is actually a 1 tbsp of sherry. But this is optional still and the difference will not be super big to notice.
