Clementine Sorbet

A refreshing sorbet made with clementines.

Total Time 25 minutes
Servings: 6 servings

Ingredients
  

  • 2 cups clementine juice fresh
  • 3/4 cup sugar
  • 1/2 cup water
  • 1 tbsp lemon juice
  • 1 tsp clementine zest

Method
 

  1. Simmer the sugar and water until the sugar dissolves, then cool this syrup.
  2. Stir the clementine juice, lemon juice, and zest into the cooled syrup.
  3. Chill the mixture thoroughly in the fridge.
  4. Churn in an ice cream maker until thick, or freeze in a shallow dish and scrape with a fork every 30 minutes.
  5. Freeze until firm, then scoop and serve.

Notes

Scraping every 30 minutes gives a fluffy texture if you don't have a churner; let it freeze a few hours total.
