Classic Snickerdoodles

Buttery, soft, and rolled in a cinnamon-sugar coating that gets slightly crisp on the outside while staying pillowy in the middle. These are the cookies that make the whole kitchen smell incredible within five minutes of going into the oven. Kids love them, adults secretly love them more.

Ingredients
  

  • 2 3/4 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 tbsp granulated sugar for rolling
  • 1 1/2 tsp cinnamon for rolling

Method
 

  1. Preheat oven to 375°F and line baking sheets with parchment.
  2. Whisk flour, cream of tartar, baking soda, and salt together.
  3. Beat butter and 1 1/2 cups sugar until fluffy, add eggs and vanilla, then stir in flour mixture.
  4. Mix 3 tablespoons sugar and cinnamon together in a small bowl.
  5. Roll dough into 1 1/2-inch balls and roll each ball in cinnamon sugar to coat.
  6. Place on prepared sheets 2 inches apart and bake 9-11 minutes until edges are just set.
  7. Cool on pan 5 minutes — they firm up as they cool.
