Classic Reese's Peanut Butter Cup

Ingredients
  

  • cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • ½ cup creamy peanut butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 30 mini Reese's peanut butter cups unwrapped
  • 1 cup semi-sweet chocolate chips
  • ½ cup creamy peanut butter for drizzle
  • 2 tablespoons powdered sugar for drizzle

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, brown sugar, and ½ cup peanut butter until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla extract and mix well.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chocolate chips.
  6. Scoop about 2 tablespoons of dough and flatten slightly. Press a mini Reese's cup into the center and wrap dough around it, rolling into a ball.
  7. Place cookies on prepared baking sheets, spacing 2 inches apart.
  8. Bake for 9-10 minutes until edges are set but centers are still slightly soft. Don't overbake!
  9. Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. For the peanut butter drizzle, microwave ½ cup peanut butter for 20 seconds until slightly melted. Stir in powdered sugar until smooth, then drizzle over cooled cookies using a fork or piping bag.
