Classic Raspberry Thumbprint Cookies

Delicate shortbread thumbprint cookies hold a little bit of raspberry jam in each of them.

Ingredients
  

  • 1 cup unsalted butter softened
  • 2/3 cup granulated sugar
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup raspberry jam

Method
 

  1. Preheat oven to 350F and line two baking sheets with parchment.
  2. Cream the butter and sugar until fluffy, then beat in the egg yolks and vanilla.
  3. Mix in the flour and salt until a soft dough forms.
  4. Roll into 1-inch balls, place on sheets, and press a deep well into each with your thumb.
  5. Spoon a little raspberry jam into each well.
  6. Bake 12 to 14 minutes until the edges are just set and pale golden. Cool on the pan.

Notes

Chill the dough 15 minutes if it feels too soft to roll.
