Classic New York-Style Cheesecake

This rich New York cheesecake has a smooth vanilla center and a buttery Graham crust.

Ingredients
  

  • 2 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 32 oz cream cheese softened
  • 1.25 cups sugar
  • 4 eggs
  • 0.66 cup sour cream
  • 2 tsp vanilla extract
  • 2 tbsp flour

Method
 

  1. Preheat the oven to 325F. Mix graham crumbs and melted butter, press into a springform pan, and bake 10 minutes.
  2. Beat the cream cheese and sugar until smooth, then beat in the flour.
  3. Add the eggs one at a time on low speed, then mix in sour cream and vanilla just until combined.
  4. Pour over the crust and bake 60-70 minutes until the edges are set but the center jiggles slightly.
  5. Turn off the oven and let the cheesecake cool inside with the door cracked for 1 hour.
  6. Chill in the fridge at least 6 hours or overnight before slicing.

Notes

A water bath helps prevent cracks, but the slow oven cool-down works almost as well.
