Classic New York-Style Cheesecake

A towering and velvety New York cheesecake that has a buttery graham cracker crust with a perfectly creamy and dense center.

Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup butter melted
  • 4 8-oz blocks cream cheese softened
  • 1.25 cups sugar
  • 4 large eggs
  • 2/3 cup sour cream
  • 1 tbsp vanilla extract

Method
 

  1. Stir the graham crumbs with the melted butter and press firmly into the bottom of a springform pan.
  2. Beat the cream cheese and sugar until completely smooth, scraping the bowl often.
  3. Add the eggs one at a time on low speed, then beat in the sour cream and vanilla just until combined.
  4. Pour the batter over the crust and bake at 325F in a water bath until the center is just set, about 70 minutes.
  5. Turn off the oven and let the cheesecake cool inside with the door cracked, then chill at least 6 hours before slicing.
