Classic New York Cheesecake

This cheesecake is ultra creamy and tall with a dense texture and buttery graham cracker crust. The signature cheesecakes with a rich buttery graham cracker crust and creamy butter cheesecake.

Ingredients
  

  • 2 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 32 oz cream cheese softened
  • 1 1/4 cups granulated sugar
  • 4 eggs room temperature
  • 2/3 cup sour cream
  • 1 tbsp vanilla extract
  • 2 tbsp all-purpose flour

Method
 

  1. Heat oven to 325F. Stir graham crumbs with melted butter and press firmly into a 9-inch springform pan. Bake 10 minutes, then cool.
  2. Beat cream cheese and sugar until completely smooth, scraping the bowl often.
  3. Mix in flour, then add eggs one at a time on low speed. Blend in sour cream and vanilla just until combined.
  4. Pour over the crust and smooth the top. Bake 65 to 75 minutes until the edges are set but the center still jiggles slightly.
  5. Turn off the oven, crack the door, and let the cake sit 1 hour. Chill at least 6 hours before slicing.

Notes

Run a knife around the edge as soon as it comes out of the oven to prevent cracks.
