Classic New York Cheesecake

Ultra-rich New York-style cheesecake with a buttery graham cracker crust and smooth cheesecake filling that slices like a dream.

Ingredients
  

  • 2 cups graham cracker crumbs
  • 6 tbsp unsalted butter melted
  • 1 cup granulated sugar divided
  • 32 oz cream cheese softened
  • 1 cup sour cream room temperature
  • 1 tbsp vanilla extract
  • 4 large eggs room temperature
  • 2 tbsp all-purpose flour

Method
 

  1. Heat your oven to 325F and wrap the outside of a 9-inch springform pan in two layers of foil.
  2. Stir the graham crumbs, melted butter, and 2 tablespoons of the sugar together, press firmly into the bottom of the pan, and bake 10 minutes.
  3. Beat the cream cheese with the remaining sugar until totally smooth, then mix in the sour cream, vanilla, and flour.
  4. Add the eggs one at a time on low speed, just until combined, then pour the filling over the cooled crust.
  5. Set the pan in a roasting dish and pour in hot water until it reaches halfway up the sides, then bake 70 to 75 minutes until the center jiggles slightly.
  6. Turn off the oven, crack the door, and let it sit an hour so it doesn't crack.
  7. Chill in the fridge at least 6 hours or overnight before slicing.

Notes

Run a knife around the edge while it's still warm so the cake can shrink without tearing.
