Classic Italian Pasta Salad

This cold pasta salad is the one you bring to every summer gathering and never come home with leftovers. It's also great for meal prepping — make it Sunday, eat it for lunch all week. The longer it sits, the better the flavors get.

Ingredients
  

  • 1 lb rotini pasta cooked and cooled
  • 1 cup salami diced
  • 1 cup black olives sliced
  • 1 cup cherry tomatoes halved
  • 1 cup green bell pepper diced
  • 1/2 cup red onion finely diced
  • 1/2 cup pepperoncini sliced
  • 1 cup shredded Parmesan
  • 1 bottle 8 oz Italian dressing
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method
 

  1. Cook rotini according to package directions. Drain, rinse under cold water, and let cool completely.
  2. In a large bowl, combine cooled pasta with salami, olives, cherry tomatoes, bell pepper, red onion, and pepperoncini.
  3. Pour Italian dressing over the top and toss well to coat. Add oregano, salt, and pepper.
  4. Stir in Parmesan. Taste and adjust seasoning.
  5. Cover and refrigerate at least 1 hour before serving. Toss again before serving and add a splash more dressing if needed.
