Classic Breaded Chicken Schnitzel

Schnitzel is made from chicken breast that has been pounded down and fried until it has a nice crunchy golden coating.

Ingredients
  

  • 4 chicken breasts pounded very thin
  • 0.5 cup all-purpose flour
  • 2 eggs beaten
  • 2 cup fine breadcrumbs
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup vegetable oil
  • 1 lemon cut into wedges

Method
 

  1. Pound the chicken breasts between plastic wrap until very thin and even.
  2. Season the flour with salt and pepper, then dredge each cutlet in flour, egg, and breadcrumbs.
  3. Heat the oil in a large skillet over medium-high until shimmering.
  4. Fry each schnitzel 2 to 3 minutes per side until golden brown, gently swirling the pan so the oil washes over the top.
  5. Drain on a wire rack and serve with lemon wedges.

Notes

Swirling the hot oil over the top while frying gives schnitzel its signature crinkly, puffed crust.
