Classic Beef and Noodle Casserole

This is pure nostalgia in a casserole dish – the kind of recipe that reminds you of grandma's cooking! With tender egg noodles, seasoned ground beef, and a creamy tomato sauce, it's simple, satisfying, and always a hit. My kids ask for this at least once a week, and honestly, I don't blame them!

Ingredients
  

  • 12 oz egg noodles
  • lbs ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can 15 oz tomato sauce
  • 1 can 14.5 oz diced tomatoes, undrained
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 2 cups shredded mozzarella cheese divided
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley for garnish optional

Method
 

  1. Preheat oven to 350°F. Cook egg noodles according to package directions until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, brown ground beef with diced onion until beef is no longer pink, about 8-10 minutes. Drain excess fat.
  3. Add minced garlic and cook for 1 minute until fragrant. Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  4. In a separate bowl, mix together cream cheese, sour cream, and 1 cup of mozzarella cheese until well combined.
  5. In a greased 9x13-inch baking dish, layer half the cooked noodles, then spread the cream cheese mixture over them, then add remaining noodles.
  6. Pour the beef and tomato mixture over the top and spread evenly. Sprinkle with remaining 1 cup mozzarella cheese.
  7. Bake uncovered for 25-30 minutes until cheese is melted and bubbly. Let stand 5 minutes, garnish with fresh parsley if desired, and serve.
