Citrus and Herb Roasted Sea Bass

Sea bass fillets are roasted with citrus and herbs until tender and aromatic.

Ingredients
  

  • 4 sea bass fillets about 6 oz each
  • 1 orange thinly sliced
  • 1 lemon thinly sliced
  • 3 tbsp olive oil
  • 3 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 cloves garlic sliced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat the oven to 400 degrees F.
  2. Arrange the orange and lemon slices in a single layer across a baking dish.
  3. Lay the sea bass fillets on top and drizzle with olive oil, then season with salt and pepper.
  4. Tuck the thyme, rosemary, and garlic around and over the fish.
  5. Roast 18 to 20 minutes, until the sea bass flakes easily.
  6. Serve the fillets with the roasted citrus slices on the side.

Notes

Spoon the warm citrusy pan oil over the fish at the table for an extra hit of flavor.
