Cinnamon Swirl Bread

Ingredients
  

  • 2 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/3 cup granulated erythritol or monk fruit sweetener
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 5 large eggs
  • 1/3 cup melted butter
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 3 tbsp cinnamon mixed with 3 tbsp erythritol for swirl

Method
 

  1. Preheat oven to 350°F and line a 9x5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut flour, sweetener, baking powder, and salt.
  3. In a separate bowl, beat eggs, then add melted butter, almond milk, and vanilla extract and mix well.
  4. Pour wet ingredients into dry ingredients and stir until a thick batter forms with no lumps.
  5. Pour half the batter into the prepared loaf pan and sprinkle with half of the cinnamon-sweetener mixture.
  6. Add remaining batter on top and sprinkle with remaining cinnamon mixture, then use a knife to swirl the mixture through the batter in a zigzag motion.
  7. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
