Chuletas Can Can Bites

Pork chop bites that are fried crispy with crackly edges and marinated in a citrusy adobo.

Ingredients
  

  • 2 lb pork shoulder cut into chunks
  • 3 tbsp adobo seasoning
  • 4 cloves garlic minced
  • 3 tbsp orange juice
  • 2 tbsp lime juice
  • 1 tsp oregano
  • 3 cups vegetable oil for frying

Method
 

  1. Toss the pork chunks with adobo, garlic, orange juice, lime juice, and oregano and marinate for at least 30 minutes.
  2. Heat the oil to 350F in a deep pot.
  3. Fry the pork in batches for 8 to 10 minutes until deeply golden and crispy on the edges.
  4. Drain on paper towels and let rest a few minutes.
  5. Serve hot with extra lime wedges.

Notes

Leaving a little fat on the pork is what gives you those addictive crackling edges.
