Servings: 10 slices

Ingredients

  • 4 eggs
  • 3/4 cup sugar
  • 1/2 cup flour
  • 1/4 cup cocoa powder
  • 1.5 cups heavy cream
  • 8 oz chocolate melted
  • 2 tbsp powdered sugar

Method

  1. Beat the eggs and sugar until pale and fluffy, then fold in the flour and cocoa.
  2. Spread onto a lined jelly roll pan and bake at 375F for 10 to 12 minutes.
  3. Turn the warm sponge onto a towel and roll it up to cool.
  4. Whip the cream with powdered sugar, unroll the sponge, spread the cream, and re-roll.
  5. Frost with the melted chocolate and drag a fork through it for bark texture.
  6. Chill 30 minutes, then dust with powdered sugar snow before slicing.

Notes

Rolling the sponge while warm prevents cracking.
