Chocolate Stout Cake

Ingredients
  

  • 1 cup gluten-free stout beer
  • 1 cup unsalted butter
  • 3/4 cup unsweetened cocoa powder
  • 2 cups gluten-free all-purpose flour blend
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 2 large eggs
  • 2/3 cup sour cream
  • 8 ounces cream cheese softened
  • 2 cups powdered sugar
  • 1/2 cup heavy cream

Method
 

  1. Preheat oven to 350°F and grease two 9-inch round cake pans, then line with parchment paper.
  2. In a large saucepan, heat the stout and butter until butter melts, then whisk in cocoa powder until smooth and let cool slightly.
  3. In a large bowl, whisk together gluten-free flour, sugar, baking soda, and salt, then add the stout mixture and whisk until combined.
  4. Beat in eggs one at a time, then add sour cream and mix until smooth, divide batter between pans and bake for 30-35 minutes until a toothpick comes out clean.
  5. Let cakes cool completely, then beat cream cheese until fluffy, gradually add powdered sugar and heavy cream, and frost the cooled cake layers.
