Chocolate Peanut Butter Truffles

No-bake, make-ahead, and completely irresistible — these truffles check every box for a party dessert bite. They look like something from a chocolate shop but take about thirty minutes to make and roll. Keep them chilled until serving time.

Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 4 tbsp butter softened
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • Flaky sea salt or sprinkles for topping

Method
 

  1. Mix peanut butter, powdered sugar, butter, vanilla, and salt until a smooth dough forms.
  2. Roll into 1-inch balls and place on a parchment-lined baking sheet.
  3. Freeze for 20 minutes until firm.
  4. Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  5. Dip each frozen peanut butter ball in melted chocolate using a fork, letting excess drip off.
  6. Place back on parchment and immediately top with a pinch of flaky salt or sprinkles.
  7. Refrigerate until chocolate sets, about 15 minutes.
