Chocolate Peanut Butter No-Bake Cookies

Ingredients
  

  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 3 cups gluten-free quick-cooking oats
  • 1/4 tsp salt

Method
 

  1. Line two baking sheets with parchment paper or wax paper and set aside.
  2. In a large saucepan, combine sugar, milk, butter, and cocoa powder. Bring to a rolling boil over medium heat, stirring constantly.
  3. Once boiling, continue to boil for exactly 1 minute without stirring, then remove from heat immediately.
  4. Quickly stir in peanut butter and vanilla extract until smooth and well combined.
  5. Add the gluten-free oats and salt, stirring until everything is evenly coated.
  6. Working quickly, drop spoonfuls of the mixture onto the prepared baking sheets, using about 2 tablespoons per cookie.
  7. Allow cookies to cool at room temperature for 20-30 minutes until completely set and firm to the touch.
  8. Store in an airtight container at room temperature for up to 5 days.
