Chicken Wings

Buffalo sauce sticky glaze on crispy fried chicken wings.

Servings: 6 servings

Ingredients
  

  • 2 lb chicken wings
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 cup buffalo sauce
  • 3 tbsp butter melted
  • 3 cups vegetable oil for frying

Method
 

  1. Pat the wings completely dry and toss with cornstarch and salt.
  2. Heat the oil to 350 degrees F in a deep pot.
  3. Fry the wings 8 minutes, then remove and rest 5 minutes.
  4. Raise the oil to 375 degrees F and fry again 5 minutes, until deep golden and crisp.
  5. Toss the hot wings with buffalo sauce and melted butter.
  6. Serve right away with celery and blue cheese.

Notes

The double fry is what gives them shatteringly crispy skin.
