Chicken Tortilla Casserole

Tex Mex casseroles are super easy and simple! Enjoy layers of tortillas, canned chicken, savory enchilada sauce, and lots of gooey cheese that bubbles and bakes into a golden brown delight.

Servings: 6 servings

Ingredients
  

  • 2 cans canned chicken drained
  • 2 cups red enchilada sauce
  • 8 small corn tortillas halved
  • 1 can black beans drained and rinsed
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup corn

Method
 

  1. Preheat the oven to 375 degrees F and grease a 9x13 baking dish.
  2. Stir the chicken, beans, and corn together with half of the enchilada sauce.
  3. Spread a thin layer of sauce in the dish, then add a layer of tortillas.
  4. Spoon over some chicken mixture and sprinkle with cheese, then repeat the layers.
  5. Top with the remaining sauce and cheese.
  6. Bake for 30 minutes until bubbly and golden, then let rest before serving.

Notes

Garnish with fresh cilantro and a dollop of sour cream.
