Chicken Stuffed Peppers

Bell peppers stuffed with a delicious combination of rotisserie chicken, rice, and cheese, and then baked.

Servings: 4 servings

Ingredients
  

  • 4 bell peppers halved
  • 2 cups rotisserie chicken shredded
  • 1 1/2 cups cooked rice
  • 1 cup marinara sauce
  • 1 1/2 cups mozzarella shredded
  • 1 tsp Italian seasoning

Method
 

  1. Heat oven to 375F. Arrange the pepper halves cut-side up in a baking dish.
  2. Mix the chicken, rice, marinara, half the cheese, and Italian seasoning.
  3. Spoon the filling into each pepper half.
  4. Cover with foil and bake 25 minutes, then uncover and top with the rest of the cheese.
  5. Bake 10 more minutes until the peppers are tender and the cheese is melted.

Notes

Microwave the peppers for two minutes first if you like them very soft.
