Chicken Satay Skewers

Skewers of marinated chicken grilled to a nice char and accompanied by a delicious and savory dipping sauce made with peanut butter.

Ingredients
  

  • 1.5 lb chicken breast cut into strips
  • 1 cup coconut milk
  • 2 tbsp curry powder
  • 1/3 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey

Method
 

  1. Whisk half the coconut milk with the curry powder and toss with the chicken strips. Marinate 20 minutes.
  2. Thread the chicken onto soaked skewers.
  3. Grill or broil for 5 to 6 minutes per side until charred and cooked through.
  4. Whisk the remaining coconut milk with peanut butter, soy sauce, lime juice, and honey for the sauce.
  5. Serve the skewers warm with the peanut sauce for dipping.

Notes

Soak wooden skewers in water for 20 minutes so they don't burn.
