Chicken Parmesan Casserole Bake

Ingredients
  

  • 2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 24 oz marinara sauce your favorite jar
  • 2 cups shredded mozzarella cheese divided
  • 1 cup grated Parmesan cheese divided
  • 1 1/2 cups Italian breadcrumbs
  • 4 tablespoons butter melted
  • Fresh basil for garnish optional

Method
 

  1. Preheat your oven to 375°F and grease a 9x13-inch baking dish.
  2. Heat the olive oil in a large skillet over medium-high heat. Season the chicken pieces with garlic powder, Italian seasoning, salt, and pepper. Cook the chicken for 5-7 minutes until just cooked through and lightly browned. It doesn't need to be fully cooked as it will finish in the oven.
  3. Spread 1 cup of marinara sauce on the bottom of your prepared baking dish.
  4. Layer the cooked chicken pieces over the sauce. Pour the remaining marinara sauce over the chicken.
  5. Sprinkle 1 cup of mozzarella cheese and 1/2 cup of Parmesan cheese over the top.
  6. In a small bowl, mix the breadcrumbs with the melted butter and the remaining 1/2 cup of Parmesan cheese. Sprinkle this mixture evenly over the cheese layer.
  7. Top with the remaining 1 cup of mozzarella cheese.
  8. Bake uncovered for 25-30 minutes until the cheese is melted, bubbly, and the breadcrumb topping is golden brown.
  9. Let the casserole rest for 5 minutes before serving. Garnish with fresh basil if desired. Serve over pasta or with garlic bread for the ultimate comfort meal!
