Chicken Meatballs with Lemon Herb Sauce

Ground chicken meatballs feel lighter but still completely satisfying at a party. The lemon herb pan sauce comes together in minutes and makes them taste way more intentional than you had to try. A nice change of pace from the usual beef.

Ingredients
  

  • 1.5 lbs ground chicken
  • 1/3 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • 2 tbsp grated Parmesan
  • 1 tbsp fresh parsley chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 3 tbsp butter
  • Juice of 1 lemon
  • 1/4 cup chicken broth
  • 1 tbsp fresh thyme leaves

Method
 

  1. Mix ground chicken, panko, egg, garlic, Parmesan, parsley, salt, and pepper until combined, then roll into 1.5-inch balls.
  2. Heat olive oil in a large skillet over medium-high heat and brown meatballs on all sides, about 6-8 minutes total.
  3. Remove meatballs and reduce heat to medium.
  4. Add butter, lemon juice, chicken broth, and thyme to the skillet and stir, scraping up any browned bits.
  5. Return meatballs to the pan and simmer 3-4 minutes until cooked through and coated in sauce.
  6. Transfer to a platter and spoon remaining sauce over top.
