Chicken Margherita

Ingredients
  

  • 4 boneless skinless chicken breasts pounded to even thickness
  • 8 ounces fresh mozzarella cheese sliced
  • 3 large Roma tomatoes sliced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup fresh basil leaves
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • Cooking spray

Method
 

  1. Preheat oven to 400°F and spray a baking dish with cooking spray. Season chicken breasts on both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken breasts and cook for 4-5 minutes per side until golden brown. Add minced garlic during the last minute of cooking.
  3. Top each chicken breast with sliced tomatoes and fresh mozzarella. Transfer the skillet to the preheated oven and bake for 8-10 minutes until chicken is cooked through and cheese is melted.
  4. While chicken bakes, make the balsamic glaze by combining balsamic vinegar and honey in a small saucepan over medium heat. Simmer for 5-7 minutes, stirring occasionally, until reduced by half and slightly thickened.
  5. Remove chicken from oven and top with fresh basil leaves. Drizzle the balsamic glaze over each chicken breast and serve immediately.
