Chicken Jambalaya

A smoky one-pot rice meal packed with chicken, sausage, peppers and Creole seasoning.

Ingredients
  

  • 1 lb chicken thighs cubed
  • 8 oz andouille sausage sliced
  • 1 1/2 cups long-grain rice
  • 3 cups chicken broth
  • 1 bell pepper diced
  • 1 onion diced
  • 2 tsp Cajun seasoning

Method
 

  1. Brown the chicken and sausage in a large pot, then set aside.
  2. Saute the onion and bell pepper until softened, about 5 minutes.
  3. Stir in the rice and Cajun seasoning to toast for 1 minute.
  4. Return the meat, add the broth, and bring to a boil.
  5. Cover and simmer 20 minutes until the rice is tender and the liquid is absorbed.

Notes

Add a can of diced tomatoes for a more Creole-style jambalaya.
