Chicken and Cheese Enchiladas

Chicken enchiladas feature rotisserie chicken rolled in tortillas, covered with enchilada sauce, and topped with melted cheese.

Ingredients
  

  • 3 cups shredded rotisserie chicken
  • 2 cups shredded Mexican cheese blend
  • 8 corn tortillas
  • 2 cups red enchilada sauce
  • 1/4 cup chopped cilantro
  • 1/4 cup diced onion

Method
 

  1. Preheat the oven to 375 degrees F and spread a little sauce in a baking dish.
  2. Mix the chicken with half the cheese and the diced onion.
  3. Warm the tortillas, fill each with the chicken mixture, roll up, and place seam-side down.
  4. Pour the remaining sauce over the top and sprinkle with the rest of the cheese.
  5. Bake for 20 to 25 minutes until bubbly, then top with cilantro.

Notes

Warming the tortillas first keeps them from cracking as you roll.
