Chewy Pecan Molasses Cookies

Ingredients
  

  • 3/4 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 3/4 cup pecans chopped

Method
 

  1. Cream the butter and brown sugar, then beat in the molasses and egg.
  2. Whisk the flour, baking soda, ginger, and cinnamon, then stir into the wet mixture.
  3. Fold in the chopped pecans until evenly combined.
  4. Roll into balls and place on lined baking sheets.
  5. Bake at 350F for 9 to 11 minutes until crackled on top and soft in the center.
  6. Let cool on the pan a few minutes so they set up chewy.

Notes

Pull them just as the tops crack for the chewiest texture.
