- Brown the ground beef in a skillet over medium-high heat and drain the fat.
- Add the onion and cook until softened.
- Stir in the taco seasoning and the canned tomatoes and simmer 8 to 10 minutes.
- Sprinkle the cheddar over the top, cover the skillet and let the steam melt the cheese evenly.
- Finish with chopped cilantro before serving.
Notes
Draining the fat prevents grease and keeps the seasoning from being diluted. Packet taco seasoning is convenient but high in sodium - a homemade blend of chili powder, cumin, garlic powder and oregano gives you more control. Covering the skillet melts the cheese more evenly than broiling. Swap in ground turkey or a plant-based protein, pepper jack for heat, or add black beans or corn to stretch it.
