Cheesy Scrambled Eggs with Herbs

Sometimes you just need perfect scrambled eggs, and these are the low-and-slow kind that come out silky instead of rubbery. They take about 10 minutes and feel a little luxurious without being complicated. Fresh herbs make them feel special.

Ingredients
  

  • 8 large eggs
  • 3 tbsp unsalted butter
  • 2 tbsp whole milk or cream
  • 1/2 cup shredded Gruyère cheese
  • 2 tbsp fresh chives minced
  • 1 tbsp fresh dill
  • Salt and pepper to taste

Method
 

  1. Crack eggs into a bowl, add milk, salt, and pepper, and whisk until fully combined.
  2. Melt butter in a nonstick skillet over low heat. Pour in the egg mixture.
  3. Stir gently and continuously with a rubber spatula, scraping the bottom and sides as the eggs slowly cook.
  4. When the eggs are about 80% set and still slightly wet-looking, remove from heat and stir in the Gruyère.
  5. Fold in chives and dill, then serve immediately on warm plates or toast.
