Method
- Crack eggs into a bowl, add milk, salt, and pepper, and whisk until fully combined.
- Melt butter in a nonstick skillet over low heat. Pour in the egg mixture.
- Stir gently and continuously with a rubber spatula, scraping the bottom and sides as the eggs slowly cook.
- When the eggs are about 80% set and still slightly wet-looking, remove from heat and stir in the Gruyère.
- Fold in chives and dill, then serve immediately on warm plates or toast.
