Ingredients

  • 24 oz frozen shredded hash browns thawed in refrigerator, squeezed dry
  • 1 lb bulk breakfast pork sausage
  • 8 large eggs

  • 2 cups shredded cheddar divided
  • 1/2 teaspoon garlic powder

  • 1 teaspoon butter for dish

Method

  1. Heat oven to 350°F. Butter a 9x13-inch dish. Cook sausage in a skillet over medium heat for 8–10 minutes, breaking it into crumbles, until 160°F; drain.
  2. Whisk eggs, milk, sour cream, garlic powder and pepper. Stir in dry thawed potatoes, cooked sausage and 1 1/2 cups cheddar. Spread in dish and add remaining cheddar.
  3. Bake 45–55 minutes until the middle is set and measures 165°F. Tent with foil if the cheese browns early. Rest 10 minutes before cutting.
