Ingredients
  

  • 1 30 oz bag frozen shredded hash browns, thawed
  • 1 10.5 oz can cream of chicken soup
  • 2 cups sour cream
  • 3 cups shredded sharp cheddar cheese divided
  • 1/2 cup butter melted
  • 1 small onion finely diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cornflakes crushed

Method
 

  1. Grease a 9x13-inch baking dish with cooking spray or butter.
  2. In a large bowl, combine thawed hash browns, cream of chicken soup, sour cream, 2 cups of the shredded cheese, diced onion, garlic powder, salt, and pepper. Mix until everything is well combined.
  3. Spread the mixture evenly into the prepared baking dish.
  4. In a small bowl, combine crushed cornflakes with melted butter and the remaining 1 cup of cheese. Sprinkle this mixture evenly over the top of the casserole.
  5. Cover tightly with aluminum foil and refrigerate overnight (or at least 4 hours).
  6. When ready to bake, preheat oven to 350°F. Bake covered for 30 minutes.
  7. Remove foil and bake an additional 15 minutes until the top is golden brown and crispy.
  8. Let stand for 5 minutes before serving. Garnish with chopped green onions or fresh parsley if desired.
