- Brown the ground beef in a large skillet over medium-high heat, then drain the excess fat.
- Add the onion and garlic and cook until softened, about 4 minutes.
- Stir in the undrained tomatoes and beef broth and bring to a simmer.
- Add the dry pasta directly to the simmering liquid, cover and cook 12 to 15 minutes until tender, stirring occasionally.
- Remove from the heat, stir in the cheddar until melted and season with salt and pepper.
Notes
Use 80/20 beef for flavor but drain the fat after browning or the sauce turns greasy. The tomato liquid is part of the sauce base, so do not drain the can. Adding the cheese off the heat gives a smoother melt. For a creamier version use Velveeta or stir in cream cheese; for a different profile use Italian seasoning and mozzarella.
