Cheesy Grilled Chicken Quesadillas

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • 4 large flour tortillas
  • 2 cups shredded cheese cheddar, Monterey Jack, or a mix
  • 1/4 cup chopped cilantro
  • Salsa sour cream, and guacamole for serving

Method
 

  1. Preheat your grill to medium-high heat.
  2. Brush the chicken breasts with olive oil and sprinkle with taco seasoning.
  3. Grill the chicken breasts for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes.
  4. Slice the grilled chicken into thin strips or bite-sized pieces.
  5. Heat a large skillet or griddle over medium heat. Place one tortilla in the skillet and sprinkle evenly with 1/2 cup of shredded cheese.
  6. Add a layer of sliced chicken and sprinkle with chopped cilantro.
  7. Top with another 1/2 cup of shredded cheese and place a second tortilla on top.
  8. Cook for 2-3 minutes on each side, or until the cheese is melted and the tortillas are golden brown and crispy.
  9. Repeat with the remaining tortillas and fillings.
  10. Cut each quesadilla into wedges and serve hot with salsa, sour cream, and guacamole.

Notes

For a spicier kick, add some chopped jalapeños or a dash of hot sauce to the quesadilla filling. These quesadillas are great for meal prep and can be reheated in the oven or microwave. You can customize these quesadillas with your favorite fillings like sautéed peppers and onions, black beans, or corn.
