Cheesy Chicken Quesadillas

Ingredients
  

  • 1 can 12.5 oz chicken, drained
  • 2 cups shredded cheese cheddar, Monterey Jack, or your favorite
  • 8 flour tortillas
  • Optional: salsa sour cream, and guacamole for serving

Method
 

  1. Heat a large skillet over medium heat.
  2. While the skillet heats up, mix the drained chicken and shredded cheese in a bowl until well combined.
  3. Place one tortilla in the hot skillet and spread about 1/2 cup of the chicken and cheese mixture evenly over the tortilla.
  4. Top with another tortilla and press down gently.
  5. Cook for 2-3 minutes, or until the bottom tortilla is golden brown and the cheese starts to melt.
  6. Carefully flip the quesadilla with a spatula and cook for another 2-3 minutes on the other side until golden and crispy.
  7. Remove from the skillet and let cool for a minute before cutting into wedges.
  8. Repeat steps 3-7 with the remaining tortillas and chicken mixture.
  9. Serve with salsa, sour cream, and guacamole if desired. Enjoy!

Notes

You can add other fillings like diced bell peppers, onions, or black beans for extra flavor and texture. These quesadillas are perfect for lunch, dinner, or even a fun appetizer. They’re great for picky eaters!
