Cheesy Chicken and Bean Quesadillas

This is a 15-minute dinner that feels like a total non-event to make but every kid thinks it is a treat. Use a rotisserie chicken and it is even faster. Cut them into triangles and let the kids dip them in salsa or sour cream and everyone is happy.

Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 can 15 oz black beans, drained and rinsed
  • 2 cups Mexican blend cheese shredded
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 8 large flour tortillas
  • 1 tablespoon butter
  • 1/2 cup salsa
  • 1/2 cup sour cream

Method
 

  1. Mix shredded chicken, black beans, cumin, garlic powder, and chili powder in a bowl until combined.
  2. Lay a tortilla flat and spread a generous layer of the chicken mixture on one half, then top with shredded cheese and fold the tortilla over.
  3. Heat a large skillet over medium heat and melt a small pat of butter.
  4. Cook each quesadilla for 2 to 3 minutes per side until golden and the cheese is fully melted.
  5. Cut into triangles and serve with salsa and sour cream for dipping.
