Cheesy Brussels Sprouts Gratin from Food52

Brussels sprouts have been roasted and placed in a creamy, cheesy gratin.

Ingredients
  

  • 1.5 lb Brussels sprouts halved
  • 1 cup heavy cream
  • 1 cup shredded gruyere
  • 2 cloves garlic minced
  • 0.5 cup breadcrumbs
  • 1 tbsp butter melted

Method
 

  1. Blanch the halved Brussels sprouts in boiling water for three minutes, then drain.
  2. Arrange them in a buttered baking dish and scatter the garlic over them.
  3. Pour the cream over the sprouts and sprinkle with the gruyere.
  4. Toss the breadcrumbs with melted butter and scatter on top.
  5. Bake at 400F for 25 to 30 minutes until golden and bubbling.

Notes

Blanching first means the sprouts cook through evenly without the cheese over-browning.
