Cheesy Beef Empanadas

Handheld empanadas made with a buttery crust and filled with seasoned beef and cheese, then fried to a golden brown.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 cup shredded cheddar
  • 2 packages refrigerated pie crust
  • 1 egg beaten
  • salt and pepper to taste

Method
 

  1. Preheat the oven to 400F and line a baking sheet with parchment.
  2. Brown the beef with the onion over medium heat, then stir in cumin, paprika, salt and pepper; drain and cool slightly.
  3. Stir the cheddar into the warm beef so it just starts to melt.
  4. Cut the pie crust into 4-inch rounds, spoon filling onto one half, fold over and crimp the edges with a fork.
  5. Brush each empanada with beaten egg and bake 20-22 minutes until deep golden.
  6. Let them rest 5 minutes before serving so the filling sets.

Notes

Freeze unbaked empanadas on a tray, then bake straight from frozen, adding a few extra minutes.
