Cheesy Beef and Broccoli Rice Bake

Ingredients
  

  • 1 lb ground beef
  • 2 cups cooked white rice
  • 2 cups fresh or frozen broccoli florets
  • 1 can 10.5 oz condensed cream of mushroom soup
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. In a large bowl, combine the cooked rice, broccoli, cream of mushroom soup, milk, 1 1/2 cups of shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Add the cooked ground beef to the bowl and stir until everything is well incorporated.
  5. Pour the mixture into the prepared baking dish and spread out evenly.
  6. Sprinkle the remaining 1/2 cup of shredded cheddar cheese and the grated Parmesan cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese on top is golden brown.
  8. Let it cool for a few minutes before serving. Enjoy this cheesy, comforting dish with your family!

Notes

You can substitute the cream of mushroom soup with cream of chicken if you prefer. For an extra kick, add a pinch of red pepper flakes or a dash of hot sauce to the mixture before baking. Leftovers can be stored in the fridge for up to 3 days and reheated in the microwave.
