Cheesy Bacon Tater Tot Bombs

Cubes of cheese are wrapped in bacon, then baked so that the bacon crisps and the cheese oozes.

Ingredients
  

  • 24 frozen tater tots thawed slightly
  • 4 oz mozzarella cheese cut into small cubes
  • 12 slices bacon halved
  • 2 tbsp brown sugar
  • 1/2 tsp smoked paprika
  • toothpicks

Method
 

  1. Preheat the oven to 400F and line a baking sheet with parchment.
  2. Press a small cube of mozzarella into the center of each thawed tater tot, pinching it closed.
  3. Wrap each stuffed tot with a half slice of bacon and secure with a toothpick.
  4. Stir the brown sugar and smoked paprika together and sprinkle over the bombs.
  5. Bake for 22 to 25 minutes until the bacon is crisp and the cheese peeks out, then let cool 5 minutes before serving.

Notes

Letting them rest keeps the cheese from squirting out on the first bite.
