Cheese Curds

Fried battered cheese curds until crispy on the outside and soft and gooey on the inside.

Ingredients
  

  • 1 lb cheese curds
  • 1 cup flour
  • 1 egg
  • 3/4 cup beer cold
  • 1 tsp salt
  • 2 cups vegetable oil for frying

Method
 

  1. Pat the cheese curds dry and chill them in the freezer 15 minutes.
  2. Whisk the flour, egg, cold beer, and salt into a thick batter.
  3. Heat the oil to 375 degrees F in a deep pan.
  4. Dip a few curds at a time into the batter, then drop into the oil.
  5. Fry 1 to 2 minutes, just until golden, working quickly.
  6. Drain on paper towels and serve immediately while gooey.

Notes

Keep the curds cold so the cheese doesn't melt out before they crisp.
