Charbroiled Oysters

Oysters on the half shell broiled in garlic butter and parmesan until they are lightly charred and notoriously good.

Ingredients
  

  • 24 fresh oysters on the half shell
  • 0.5 cup butter softened
  • 4 cloves garlic minced
  • 0.5 cup grated parmesan
  • 2 tbsp fresh parsley chopped
  • 1 tsp hot sauce
  • 1 lemon cut into wedges

Method
 

  1. Preheat your broiler or grill to high heat.
  2. Mash together the butter, garlic, hot sauce, and a spoonful of the parmesan into a compound butter.
  3. Top each shucked oyster with a generous dab of the garlic butter.
  4. Set the oysters on a sheet pan and broil for 6 to 8 minutes until bubbling and lightly charred.
  5. Sprinkle with the remaining parmesan and fresh parsley and serve with lemon wedges.

Notes

Crusty bread on the side is non-negotiable for soaking up the buttery juices.
