Ingredients
  

  • 1 sheet frozen puff pastry thawed
  • 3 large yellow onions thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves plus extra for garnish
  • 4 ounces goat cheese crumbled
  • 1/2 cup shredded Gruyère cheese
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg beaten (for egg wash)

Method
 

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a large skillet over medium-low heat, melt the butter with olive oil. Add the sliced onions and cook, stirring occasionally, for about 30-35 minutes until they're golden brown and caramelized. (Don't rush this step, mama – it's where all the magic happens!)
  3. Stir in the balsamic vinegar, sugar, thyme, salt, and pepper, cooking for another 2-3 minutes. Remove from heat and let cool slightly.
