Caramelized Onion and Gruyère Tartlets

Buttery pastry cups filled with sweet-and-sour caramelized onions and melty gruyere.

Servings: 24 tartlets

Ingredients
  

  • 2 onions thinly sliced
  • 1 sheet puff pastry thawed
  • 1 cup shredded gruyère
  • 2 tbsp butter
  • 1 tbsp fresh thyme

Method
 

  1. Cook the onions in butter over low heat until deeply caramelized, about 20 minutes.
  2. Preheat the oven to 400 degrees F and grease a mini muffin tin.
  3. Cut the puff pastry into squares and press into the tin cups.
  4. Spoon the caramelized onions into each cup and top with gruyere.
  5. Sprinkle with thyme and bake for 16 to 18 minutes until golden.
  6. Cool slightly, then lift out and serve warm.

Notes

Caramelize the onions low and slow for the sweetest flavor.
