- Combine the chicken broth and salsa in a large pot and bring to a simmer.
- Stir in the chili powder, corn and black beans.
- Add the shredded chicken and simmer for 10 minutes.
- Stir in the lime juice off the heat and season to taste.
- Serve topped with tortilla chips and sliced avocado.
Notes
Salsa does double duty, replacing tomato, onion, garlic and jalapeno with one shortcut. Chili powder is a blend of cumin, oregano, paprika and ancho - using straight cumin or ancho changes the flavor noticeably. Rotisserie chicken saves time and adds more flavor than plain poached breast; canned chicken works but sacrifices texture. Lime juice at the end is acid balance, not garnish - it cuts the starchiness of the beans and corn.
