California Pizza Kitchen's Sedona Tortilla Soup Copycat Recipe

Ingredients
  

  • 3 cups cooked rotisserie chicken shredded
  • 5 cups chicken broth
  • 1 1/2 cups salsa
  • 1 cup corn kernels
  • 1 15-ounce can black beans, drained and rinsed
  • 1 tablespoon chili powder
  • 2 tablespoons lime juice
  • Tortilla chips and avocado for topping

Method
 

  1. Combine the chicken broth and salsa in a large pot and bring to a simmer.
  2. Stir in the chili powder, corn and black beans.
  3. Add the shredded chicken and simmer for 10 minutes.
  4. Stir in the lime juice off the heat and season to taste.
  5. Serve topped with tortilla chips and sliced avocado.

Notes

Salsa does double duty, replacing tomato, onion, garlic and jalapeno with one shortcut. Chili powder is a blend of cumin, oregano, paprika and ancho - using straight cumin or ancho changes the flavor noticeably. Rotisserie chicken saves time and adds more flavor than plain poached breast; canned chicken works but sacrifices texture. Lime juice at the end is acid balance, not garnish - it cuts the starchiness of the beans and corn.
