Cake Mix Christmas Cookies

These might just be the easiest Christmas cookies you'll ever make! Starting with a box of cake mix means you're already halfway done, and the best part? They look festive and beautiful straight out of the oven—no piping bags or frosting required. I love keeping the ingredients for these on hand for those last-minute baking emergencies we all know too well.

Ingredients
  

  • 1 box 15.25 oz white or vanilla cake mix
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup red and green M&M's or holiday sprinkles

Method
 

  1. Preheat your oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, mix together the cake mix, eggs, oil, and vanilla extract until well combined. The dough will be thick but soft.
  3. Gently fold in the M&M's or sprinkles, saving a few to press on top of each cookie.
  4. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Press a few extra M&M's or sprinkles on top of each cookie.
  5. Bake for 9-11 minutes, until the edges are just set. The centers will look slightly underdone—that's perfect!
  6. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
